So I failed to get the Bluehost SimpleScript Drupal installer to work. But feeling somewhat lazy, I decided to just trash that install and the DB and install Drupal myself.
Chase Sagum's "Option 2" is a very straight forward example of how to set it up on Bluehost.
After that, I did get the "Line 65" error but at Drupal.org I found the handy bit of advice to set the update module status to 0 Here.
